Extraction system: Continuous Cycle, cold pressing (within the first 6/12 hours after the harvesting) Color: green with yellow hues
Taste/Flavor: its aroma is ample and rotund, with hints of freshly mown grass, artichoke and wild chicory, together with notes of black pepper and almond. Its taste is fine and complex, with a flavor of lettuce and a fragrant notes of mint, rosemary and sage. Bitterness is distinct and pungency is present. 
Food Pairing: it is excellent fresh on grilled meat, vegetable soups, bruschettas and all dishes of Mediterranean cousine
